In our herb hotel in South Tyrol, we await you with regional and seasonal dishes made from local organic products of the highest quality. The menus at the Lüsnerhof are always fresh, light, and healthy. Close contact with the farmers in the Lüsen valley and its surroundings ensures short transport routes and thus ecological management in the sense of sustainability. Alpine pastures and farms in the immediate vicinity supply the Lüsnerhof with cheese and dairy products, fruit, vegetables, and free-range eggs.
Dairy products such as cheese and butter come from the Kreuzwiesenalm or from hay-milk farmers of the Burgais Dairy. Organic yoghurt and milk comes from the dairy farm in Brixen (brimi). The goat cheese from the Blauschmidt farmer in Lüsen, the free-range eggs from Villnöss, the game from Lüsner hunters, wild herbal teas, blossoms and alpine super food from Schmidhof and Gasserhof in Lüsen. The delicious bread comes directly from the Lüsner Bäcker Gasser. Dry goods such as organic pipe growers and cereals are purchased from the Ökoring. Breakfast goods like muesli are from verival, organic nuts, spreads, seeds and vegan alternatives from Koro.
We tasted and bought finest organic olive oil on a trip to Puglia, our supplier: masseria il Frantoio from Ostuni.
Hostess Maria herself cultivates herbs and roots in the hotel’s herb garden. In our herbal kitchen we produce juniper and Swiss stone pine oils as well as natural flower hydrosols with which we refine our dishes. Our well-stocked wine cellar is home to many a fine drop of wine.
Our well-trained team around our chef Luca Armellino guarantees a real feast for the palate.

Our organic field at the Blauerhof in Val di Funes
From the earth to the plate
With much care and love, farmers Raphael and Valeria combine the principles from permaculture and other ecological farming practices such as biodynamic andorganic farming on the Blauerhof farm in the idyllic nearby Val di Funes. Every single plant is cultivated from its original state: in seed form (Demeter certified). With care and love, a wide variety of vegetables are planted, including forgotten varieties.
The result: a colorful selection of crunchy and nutritious vegetables with a true, original and genuine flavour.
Harvesting takes place twice a week and so the precious produce from the organicgarden reaches our organic hotel from Val di Funes to guarantee our guests fresh, wholesome food.
These include various types of leaf salads, cabbage, cauliflower, cucumbers, Jerusalem artichokes, courgettes, pak choi, onions, herbs, cabbage, fennel, broccoli, beetroot, kohlrabi, chard, leeks and radishes.
Our herb garden
Taking care of the herb garden is my favourite work in the hotel. I'm outdoors, smelling sage, rosemary and peppermint and feel at home surrounded by plants and smells. And it's nice to know that the herbs liven up the menus of our fresh cuisine.
